Lemon Rolls

I found myself in breads and focaccias and donuts, preparations in which I can see the transformation of the dough. I mix everything. I cover it with a cloth. I'll do other things, housework or work. The wait is an hour. I try to distract myself but I'll peek every few minutes. In winter, I put a blanket over a cloth. The air is really frigid here in the south. So the magic is happening while I'm trying to distract myself. In the oven, I keep spying. It doubles again in size. Then everything worked out. And best of all, I can convey it to you, even if only through this screen. (This recipe was adapted from @mariliaarchangelo 's cinnamon rolls recipe).


Dough


- 1 cup almond milk.

- 1/4 cup coconut oil (liquid).

- 2 tablespoon demerara sugar.

- 1 tablespoon dry yeast.

- pinch of salt.

- 3 cups all-purpose flour+ 1/4 cup to roll the dough.


In a large bowl, combine milk, oil, sugar and yeast and let stand 10 minutes. Add the flour (sifted) and salt and mix everything well, first with the spatula and then with your hands. Cover with a cloth and let it rest for 1 hour or until the dough doubles in size.


Flour the countertop with 1/4 cup all-purpose flour, roll the dough into a rectangular shape, and let the dough absorb the flour onto the countertop.



Filling

- 3 tablespoon coconut oil (liquid).

- 1/4 cup demerara sugar.

- 2 lemons.


Remove lemon peel and set aside. Squeeze 2 tablespoons of juice from the same lemons and set aside in another container. Brush coconut oil all over the open dough, sprinkle sugar and lemon zest over the top. Roll the dough into a roulade. Cut the donuts approximately 5 cm thick. Grease a large mold and arrange the donuts leaving space between them. Cover the pan with a cloth and let the dough rest for another 30 minutes.


Brush coconut oil and bake in a preheated oven for 30 minutes. Finish with the syrup and more Sicilian lemon zest.


Make a very tasty lemonade with the rest of the lemon juice!


Syrup


- 1/2 cup icing sugar.

- 2 tablespoons of lemon juice.


In a small bowl, mix everything with a spoon.
